Stir-Fried Tofu Italian Style

2 tablespoons olive oil

1 clove garlic -- minced

1 teaspoon hot red pepper flakes

1 pound firm tofu -- cut into 1/2-inch cubes

1 tablespoon capers

10 black oil-cured olives -- halved and pitted

10 cherry tomatoes -- halved

1/2 cup dry white wine

1 tablespoon fresh lemon juice

1 tablespoon chopped fresh parsley

1/2 teaspoon salt

1/8 teaspoon freshly ground black pepper

 

Heat the oil in a wok or large skillet over medium heat. Add the garlic and red

pepper flakes and saute 2 minutes. Add the tofu to the hot oil and saute for 2

minutes. Ad the capers, olives, and tomatoes and cook for 1 minute. Add the

wine, lemon juice, parsley, salt, and pepper. Simmer for 1 monute and serve.
