HIGH - mushroom stock

> 1 large onion -- chopped

> 1 tablespoon cold-pressed olive oil

> 1/2 pound aged mushrooms

> 8 cups water

> 1 carrot

> 1. saute the onion in olive oil at medium-high heat for seven minutes, or

until golden. Stir constantly so that the onion does not burn.

> 2. Combine the onions with the other ingredients in a large saucepan or

stock pot and simmer for 1 hour. Strain through a sieve and discard the

onions and mushrooms.
