Easy Pita Pizza

Amount Measure Ingredient -- Preparation Method

-------- ------------ --------------------------------

1/2 onion -- thinly sliced

1 teaspoon cold-pressed olive oil

1 green pepper

membranes and seeds removed -- thinly sliced

3/4 cup Tomato Garbanzo Bean Sauce

OR Tomato Sauce

(see separate recipes)

6 whole wheat pita breads

 

Makes 6 pizzas

 

This recipe is a lifesaver when you need a great meal or snack, fast. For

kids, try adding lightly steamed vegetables that they might otherwise turn

down. These pizzas are a treat in lunch boxes.

 

1. Sauté the onion in the olive oil over medium heat for 5

minutes. Remove from the pan. In the same pan, cook the pepper, covered,

for 5 minutes over medium heat.

 

2. To assemble the pizzas, spread 2 tablespoons of the tomato sauce on

each pita. Evenly distribute the onions and peppers.

 

3. Bake at 350F for 12 to 15 minutes.

 

VARIATIONS. You can add New Age Italian Sausage (see separate recipe),

sautéed mushrooms, sautéed zucchini slices, sliced black olives, or steamed

small broccoli florets.
