Split Pea Soup (Vegetarian)

Amount Measure Ingredient -- Preparation Method

1 pound dry green split peas

1 teaspoon mild cold-pressed olive oil

1 clove -- chopped

1 leek -- chopped

1/2 onion -- chopped

1 celery stalk -- chopped

1 carrot -- chopped

1/8 teaspoon pepper

1/2 bay leaf

1 teaspoon salt

1 dash thyme

 

1. Clean the split peas and let them stand overnight in 2'12 quarts of water. Or

clean the split peas, boil in 2'/2 quarts of water for 2 minutes, and let them

stand for 1 hour.

 

2. Heat the olive oil in a large skillet. Add the garlic, leek, onion, celery,

and carrot, and saute over medium heat for 10 minutes.

 

3. Add the saut6ed vegetables and all the other ingredients to the split peas,

bring to a boil, and simmer for 2 hours. As foam appears, skim it off and

discard. Serve the soup with Whole-wheat Croutons.
