Guest guest Posted April 8, 2001 Report Share Posted April 8, 2001 * Exported from MasterCook * Gumbo (Vegetarian) Recipe By :Lindsay Wagner and Ariane Spade Serving Size : 6 Preparation Time :0:00 Categories : Kitpath New Import Soups Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 teaspoon cold-pressed olive oil 1/4 onion -- chopped 1 clove -- finely chopped 2 cups fresh or canned tomatoes with liquid -- chopped 4 ounces okra -- sliced 4 ounces lemons -- sliced 1/4 green bell pepper -- chopped 1 each ear of corn (kernels only) 3 cups water 1 bay leaf 1/2 teaspoon salt 1/4 teaspoon paprika 1 dash cayenne 2 teaspoons natural soy sauce 2 tablespoons whole-wheat pastry flour 4 tablespoons water 1 teaspoon vinegar 1. Heat the oil in a soup pot. Add the onion and cook until transparent. Stir in the garlic and cook for 1 minute. Add the tomatoes, okra, lemon, pepper, and corn and cook, covered, for 5 minutes. Add the 3 cups of water, bay leaf, salt, paprika, cayenne, and soy sauce and simmer for 1 hour. 2. Mix the flour into the 4 tablespoons of water and the vinegar. Slowly add this mixture to the soup, stirring briskly until completely mixed. Continue stirring until the soup has thickened and then serve.
