Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 8 ounces medium-wide egg noodles preferably yolk-free 16 ounces part-skim ricotta cheese 16 ounces canned crushed pineapple -- drained 2/3 cup dark or golden raisins 1 medium sweet apple -- peeled cored and grated 3 tablespoons natural canola margarine OR whipped butter -- melted 1 cup firmly packed light brown sugar OR Sucanat 1 teaspoon vanilla extract 1 teaspoon cinnamon (Jewish sweet Noodle Pudding) 6 to 8 servings None other than the classic Jewish comfort food, this is often served at holiday meals. Preheat the oven to 350 degrees. Cook the noodles in plenty of rapidly simmering water until just tender, then drain. Meanwhile, combine the remaining ingredients in a mixing bowl. Stir in the cooked noodles. Transfer the mixture to an oiled shallow 9- by 13-inch casserole dish. Bake until the top begins to brown and look crisp, about 45 to 50 minutes. Let stand 15 minutes then cut into squares to serve. This is also good served at room temperature.
