Lentils and Noodles

1 teaspoon cold-pressed vegetable oil

1 large onion -- chopped

10 cups water

2 cups lentils

5 large ripe tomatoes -- chopped, with juices reserved

1 teaspoon salt

3 tablespoons Bragg's Liquid Aminos

1 pound whole wheat elbow macaroni -- or shells

 

Heat the oil in the bottom of a large pot. Add the onion and cook covered,

until the onion is tender. Add the water, lentils, and tomatoes and their

juices. Bring to a boil and cook, covered, for 20 to 25 minutes. Stir often to

prevent sticking.

 

Add the salt, Bragg's, and macaroni, and cook another 10 minutes or until

noodles are tender. Stir often to prevent sticking.
