French Ratatouille

2 onions.

2 red peppers

3 green peppers

3 aubergines ( eggplants )

4 courgettes ( zucchini )

2 pounds tomatoes -- ( actually 2.2 pounds or 1 kg )

4 cloves garlic

5 tablespoons olive oil

1 sprig fresh thyme

salt and pepper

 

1 Prepare all the vegetables: wash the aubergines, courgettes and peppers,

and cut them in cubes. Peel and finely chop the onions. Wash the tomatoes,

remove the seeds, chop roughly. Peel the garlic.

2 Heat the oil in a large saucepan. Put in the vegetables in the following

order, at intervals of 5 minutes: onions, peppers, aubergines, courgettes,

tomatoes, then the garlic and thyme. Be sure to respect this order.

 

3 Season. Cover the pan and cook for 45 minutes over a low heat.
