Peel and finely chop the onions. Wash the tomatoes, remove the seeds, chop roughly. Peel the garlic. 2 Heat the oil in a large saucepan. Put in the vegetables in the following order, at intervals of 5 minutes: onions, peppers, aubergines, courgettes, tomatoes, then the garlic and thyme. Be sure to respect this order. 3 Season. Cover the pan and cook for 45 minutes over a low heat.
