Tomato Garbanzo Bean Sauce

2 teaspoons cold-pressed olive oil

1 small onion -- finely

chopped

5 parsley springs

2 garlic cloves

4 cups cooked or canned or fresh tomatoes -- chopped

salt -- to taste

pepper -- to taste

1 cup cooked garbanzo beans -- drained

 

Makes 4 cups

 

Left chunky, this sauce is used for Risotto with Tomatoes and Garbanzo

Beans (see separate recipe) and is ideal over lightly steamed vegetables

and plain pasta. When it is blended until smooth, it makes a perfect sauce

for pizzas and casseroles, with a sweet, almost ricotta taste.

 

1. Heat the oil in a large skillet. Add the onion and cook slowly until

translucent. Onions that are cooked slowly and are not allowed to burn

become very sweet.

 

2. Chop the parsley and garlic together and add to the onion. Cook for 3

minutes. Add the tomatoes with their liquid, salt, and pepper. Bring to a

boil and cook for 30 minutes. Add the garbanzo beans and cook for 10

minutes more.

 

3. If the sauce is to be smooth, blend in a food processor or a blender

until smooth.
