Stewed Spring Berries with Vanilla Ice Cream

Amount Measure Ingredient -- Preparation Method

1 1/2 pints fresh raspberries

1 pint strawberries -- ( or blueberries if available )

1 1/2 cups sugar

3/4 cup water

2 tablespoons Flamboise ( or raspberry or strawberry

syrup such as used in espresso drinks )

2 pints vanilla ice cream or yogurt

fresh mint leaves

 

Combine the berries, ( retaining about a third of the raspberries ), sugar

and water in a saucepan and bring to a boil and cook uncovered ove medium to

low heat. stirring occassionally until the sugar is a syrup and the berries

have released their juices. This will take about 10 minutes. Remove from

the heat and sir in the remaining raspberries and the Flamboise or syrup.

 

Divide the stewed berry mixture over 6 bowls and place a generous scoop of

vanilla ice cream or yogurt in the center--like an island. Garnish with

fresh mint and serve.
