Hot Fudge Pudding Cake

1 cup whole wheat pastry flour

1/4 cup granulated sweetener of your choice

1/4 cup oat flour

1/4 cup unsweetened cocoa

2 teaspoons baking powder

1/4 teaspoon salt

3/4 cup reduced-fat soymilk or other nondairy milk

2 teaspoons vanilla extract

or

1/2 teaspoon almond or coconut extract

2 tablespoons coffee or chocolate liqueur (optional)

1 cup granulated sweetener of your choice

1/4 cup unsweetened cocoa

2 cups boiling coffee or coffee substitute

 

Preheat the oven to 350F. In a small bowl, mix together the flour, 1/4 cup

sweetener, oat flour, 1/4 cup cocoa, baking powder, and salt. Stir in, but do

not overbeat: soymilk, vanilla or other extract, and liqueur. With wet fingers,

spread the batter into a lightly greased or nonstick 8-inch square pan.

Sprinkle the top evenly with a mixture of: 1 cup granulated sweetener and 1/4

cup cocoa. Pour the coffee over the top, but don't stir in. Bake for 35

minutes. The cake will be on top, with a sauce underneath. Serve plain or with

Whipped Soy Cream.

 

Fruit Pudding Cake - Omit the cocoa from both the batter and the topping. Add 1

cup chopped fresh fruit or 1.2 cup dried fruit to the batter. Use fruit juice

instead of soymilk in the batter, if you like. You can add some grated citrus

rind to the batter. Use only 1 3/4 cups boiling water instead of the coffee.

 

Lemon Pudding Cake - Omit the cocoa from the batter and the topping. Use white

or turbinado sugar for the sweetener. Omit the vanilla extract and add 1

tablespoon grated lemon zest. For the liquid in the topping, omit the coffee

and use 1/4 cup lemon juice with 1 1/2 cups boiling water.

 

Date Pudding Cake - Omit the cocoa from the batter and topping. Add 1 cup

chopped dates and 1 teaspoon grated orange rind or extract to the batter. Omit

the vanilla extract, if you like. Instead of the coffee, use 1 3/4 cups boiling

water in the topping.
