Cream Cheeze Icing

Amount Measure Ingredient -- Preparation Method

1 tablespoon cold water

1 tablespoon lemon juice

1/2 teaspoon agar powder

or

1 tablespoon agar flakes

1/4 cup honey or other liquid sweetener

1 10.5 oz package reduced-fat extra-fiirm silken tofu -- crumbled

1 teaspoon vanilla extract

or

1/2 teaspoon coconut or almond extract

 

In a small saucepan, soak the agar in the water and lemon juice for 5 minutes.

Stir in the honey or other liquid sweetener. Add the tofu to the pan. Stir

over high heat until the tofu is hot (this is important so that the agar doesn't

gel too fast). Pour the mixture into the blender with the vanilla. Blend until

very smooth. Chill in a bowl until the mixture is spreadable, but not

completely cold. Frost the cake or cupcakes, and chill again.

 

Cream Cheese-Fruit Icing - Fold into the Cream Cheese Icing mixture after it iis

blended, but while it is still hot 1 small banana mashed with 1 teaspoon lemon

juice, or 1 cup well-drained crushed pineapple.

 

Yield:
