Quick Marinara Sauce

Amount Measure Ingredient -- Preparation Method

2 cups onions -- minced

2 to 4 cloves garlic -- minced

1 28 oz can whole tomatoes and their juice

1 6 oz can tomato paste

1 teaspoon dried basil

1 teaspoon dried oregano

1 bay leaf

1/2 teaspoon sweetener of your choice

salt and pepper to taste

Optional additions:

fresh mushrooms -- chopped or sliced

carrot -- minced or grated

chopped green bell pepper

fresh parsley and/or other fresh herbs -- chopped

dried rosemary, marjoram, and/or sage

hot red pepper flakes

 

6 to 8 cups

 

In a large, lightly oiled or nonstick pot, steam-fry onions and garlic. Include

any optional additions. When the onions are soft, add the tomatoes and their

juice, crushing the tomatoes with your fingers as you pour them into the pot.

Add tomato paste, basil, oregano, bay leaf, sweetener, and salt and pepper to

taste.

 

Yield:
