Mixed Legume Soup

Amount Measure Ingredient -- Preparation Method

1/4 cup navy beans -- soaked overnight

1/4 cup baby lima beans -- soaked overnight

1/4 cup split peas

1/4 cup pearl barley

2 quarts water or vegetable stock

1 teaspoon salt

1 onion -- chopped

1 clove -- chopped

2 large carrots -- sliced

1 celery stalk -- sliced

1 leek -- light end only, sliced

2 tablespoons nutritional yeast

1/8 teaspoon pepper

1/2 teaspoon onion powder

1/2 teaspoon garlic powder

1/4 teaspoon thyme

1/4 teaspoons ground cloves

1/2 bay leaf

1/4 teaspoon ground celery seeds

 

1. Place the navy beans, lima beans, split peas, pearl barley, and water in a

large soup pot. Add the salt, bring to a boil, and cook for 40 minutes.

 

2. Add the rest of the ingredients and cook for 30 minutes more. Adjust the

seasoning and serve with fresh Whole-wheat bread and a large green salad.
