Guest guest Posted April 5, 2001 Report Share Posted April 5, 2001 * Exported from MasterCook * Corn Relish Recipe By : Vegetarian Celebrations, by Nava Atlas, page 39 Serving Size : 1 Preparation Time :0:00 Categories : Side Dishes Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 1/2 cups cooked fresh corn kernels OR thawed frozen (from about 2 medium ears) 1/4 cup minced red onion 1 small red bell pepper -- minced 3 tablespoons honey 3 tablespoons cider vinegar 1/2 teaspoon dry mustard 1/4 teaspoon dill seed -- optional salt and freshly ground pepper -- to taste Makes about 2 cups Relishes are a constant feature of Pennsylvania Dutch meals, and are part of the " sweets and sours, " condiments that are intrinsic to this cuisine. Combine all the ingredients in a mixing bowl and stir until thoroughly mixed. Pack into 1 or 2 glass jars with lids. Make up to 2 days ahead of time, or at least 2 hours before serving.
