Tofu Cacciatore

Amount Measure Ingredient -- Preparation Method

1 pound firm Chinese tofu

2 cups water

1 teaspoon cold-pressed olive oil

3 garlic cloves -- minced

3 tablespoons tomato paste

3/4 cup Mushroom Stock

(see separate recipe)

OR any vegetarian stock

1 cup canned tomatoes -- chopped

OR 2 ripe tomatoes -- chopped

1/3 pound mushrooms -- sliced

1/2 cup dry white wine

1 tablespoon fresh chopped parsley

1/2 teaspoon salt

1/2 bay leaf

1/4 teaspoon rosemary

1/4 teaspoon basil

1/8 teaspoon white pepper

1/4 teaspoon black pepper

 

Serves four

 

1. Drain the tofu and cut into 1/2- inch squares. Boil the water, add the

tofu, and simmer for 5 minutes. Drain and discard the water.

 

2. In a large skillet heat the olive oil, add the garlic, and cook for 2

minutes.

 

8. In a small bowl, mix the tomato paste and mushroom stock and whisk

until blended. Add this tomato mixture and all the other ingredients to

the skillet. Bring to a boil, reduce the heat, and simmer, covered, for 20

minutes, stirring often. Uncover and simmer for 20 minutes more. Add a

little water if the mixture gets too dry. Serve over whole wheat pasta.
