Italian Sausages And Peppers

Amount Measure Ingredient -- Preparation Method

1 teaspoon cold-pressed olive oil

2 medium onions

halved and sliced

4 cloves garlic -- thinly sliced

1/8 teaspoon ground black pepper -- up to 1/4

1/2 teaspoon basil

1/2 teaspoon oregano

1 dash cayenne

3 green peppers

membranes and seeds removed -- cut into strips

3 red peppers

membranes and seeds removed -- cut into strips

14 ounces canned Italian tomatoes -- about, chopped

salt -- to taste

8 New Age Italian Sausages I or II

(see separate recipes)

cut into 1/2-inch chunks

 

Serves eight

 

Like most Italian dishes, this one is better the day after it is made, so

make plenty for leftovers. It also tastes great on a hero sandwich.

 

1. Heat the oil in a large skillet. Add the onions and cook slowly until

limp. Add the garlic, pepper, basil, oregano, and cayenne and cook for 2

minutes more. Add the peppers, tomatoes, and salt and cook, covered, over

low heat for 60 minutes. Fast cooking over high heat will make the peppers

bitter.

 

2. Add salt to taste and cook, uncovered, for 10 minutes. The sauce

should be thick but not watery or dry.

 

3. Stir in the sausages and cook for 2 minutes more. Add more salt and

pepper if desired.

 

4. Serve immediately on a bed of whole wheat pasta.
