New Age Italian Sausage II

Amount Measure Ingredient -- Preparation Method

1 pound Marinated Tofu

(see separate recipe)

4 tablespoons whole wheat flour

4 tablespoons gluten flour

OR 4 T whole wheat flour

2 tablespoons dry whole wheat bread crumbs

1 tablespoon chopped parsley

1/4 teaspoon pepper

1/2 teaspoon basil

1/2 teaspoon oregano

1/2 teaspoon savory

2 teaspoons paprika

1 garlic clove -- pressed

1/2 cup chopped almonds

1 tablespoon cold-pressed olive oil

 

Makes approximately 10 sausages

 

1. Remove the tofu from the marinade and crumble. Reserve the liquid in

case the sausages are too dry. Mix the marinated tofu with the flours,

bread crumbs, parsley, pepper, basil, oregano, savory, paprika, and

garlic. Place in a food processor or blender and chop for 30 seconds. Add

the almonds and chop for 30 seconds more.

 

2. Take a little of the dough and press it into a sausage. If it forms

easily and does not crumble, go ahead and form the rest into sausages about

2 inches long and 3/4 inch in diameter. If the sausage crumbles, add a

little marinade.

 

3. Heat oil in a large skillet and sauté the sausages until golden brown

on all sides.
