Guest guest Posted April 5, 2001 Report Share Posted April 5, 2001 * Exported from MasterCook * New Age Italian Sausage I Recipe By : The High Road to Health by Wagner and Spade, page 155 Serving Size : 10 Preparation Time :0:00 Categories : Main Dishes, Vegetarian Soyfoods Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/4 pound Marinated Tempeh (see separate recipe) marinated for no more than 24 hours 1/2 pound Marinated Tofu (see separate recipe) marinated for no more than 24 hours 1 tablespoon chopped fresh parsley 1 tablespoon chopped fresh basil OR 1 tsp. dry basil 1/4 teaspoon oregano 1/4 teaspoon honey 2 teaspoons paprika 1/2 teaspoon ground black pepper 1 teaspoon garlic powder 1/4 teaspoon savory Makes 10 sausages Serve these sausages with spaghetti, in sandwiches, or on pizza. They will liven up any dish. For a Mexican flavor omit the basil, oregano, and savory and use cumin and chili powder instead. A dash of cayenne pepper will make the sausage spicy hot. Prepare this dish a day before you need it. 1. Blot the marinated tempeh and marinated tofu slices several times with paper towels to remove all excess marinade. Crumble them up and put them in a food processor (if you are using a blender, chop the tempeh and tofu until very fine before blending). 2. Add all the other ingredients and chop until fine, about 45 seconds. The mixture should be well blended and easily formed into sausages. If you're using a blender you'll need to blend for a longer time. 3. Preheat the oven to 350F. Form into thumb-size sausages, pressing to make them as compact as possible. Bake for 40 minutes.
