Bonne Soupe

Amount Measure Ingredient -- Preparation Method

2 large potatoes -- cubed

3 large carrots -- sliced

1/2 pound winter squash -- cubes

1 leek -- finely chopped

1/2 pound fresh green beans -- 1-inch pieces

1/2 cup peas (fresh or frozen)

1 tablespoon chopped fresh parsley

1 teaspoon salt

1/2 teaspoon pepper

 

Peel the squash, remove seeds and cube. (Any kind will do including pumpkin,

acorn, banana, and turban.)

 

Place all the ingredients in a large kettle, add water to cover, and bring to a

boil. Turn down heat and simmer for 30 minutes. Remove half of the soup, mash

thoroughly using potato ricer, food processor, or blender, and return to the

rest of the soup. Serve hot with warm bread.
