In France meatballs are called boulettes and they contain all sorts of

ingredients, not just meat. Here's our version.

1. Follow instructions 1 through 5 for Pecan Herb Loaf.

2. Roll the mixture into balls.

3. Bake at 350F in an oiled baking dish for 35 minutes or until the

boulettes are firm and browned. Serve on pasta and cover with Tomato Sauce.

VARIATIONS. For a Mediterranean flavor, place a pitted Greek olive in the

center of each ball and bake as directed. For a South Seas flavor, place a

small chunk of ripe pineapple in the center of each ball, bake, and serve

with sweet and sour sauce. Try your own ideas.
