Easy Tofu Burgers

1 pound firm Chinese tofu

1/4 cup raw soy flour

2 tablespoons whole wheat flour

2 tablespoons arrowroot powder

2 teaspoons paprika

1/2 teaspoon garlic powder

1/4 teaspoon black pepper

1/4 tablespoon ginger powder

3 tablespoons natural soy sauce

1/4 small onion -- very finely chopped

1 green onion -- very finely chopped

2 tablespoons cold-pressed vegetable oil for cooking

 

Makes four large patties.

 

1. Drain the tofu. Wrap in a clean nonterry kitchen towel and wring out

excess water. The tofu will crumble.

 

2. Combine the soy flour, whole wheat flour, arrowroot powder, paprika,

garlic powder, pepper, and ginger powder and mix well

 

3. Mix the tofu, soy sauce, onion, and green onion. Add the dry

ingredients and mix well. Knead with your hands until all the ingredients

are thoroughly blended and the mixture holds together. Let stand for 20

minutes. Form into patties.

 

4. Heat the oil in a skillet. Add the patties and, over medium heat, cook

for 7 minutes. Turn over and cook for 7 minutes more. Serve on whole

wheat hamburger buns with lettuce and tomatoes, or serve like Salisbury

steak. Also, try making these into balls to serve with spaghetti.
