Guest guest Posted April 3, 2001 Report Share Posted April 3, 2001 make a salad of those baby artichokes along with Jerusalem chokes * Exported from MasterCook * Snow Peas and Artichoke Salad with Orange Mustard Dressing Recipe By :Paul Gayler Serving Size : 4 Preparation Time :0:20 Categories : Salads Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/2 pound baby artichokes -- see note 1/4 pound Jerusalem artichokes 1/2 pound snow peas FOR THE DRESSING: 1/2 orange -- long shreds of zest and juice 1 teaspoon whole grain mustard 1 1/2 tablespoons champagne vinegar 2 1/2 tablespoons virgin olive oil 1/4 cup walnut oil salt and freshly ground black pepper 1. Prepare the poivrade artichokes by removing the stalks and trimming 1/2 inch off the tops of the leaves. As they are very young and tender no other preparation is required. 2. Peel the Jerusalem artichokes. Cook the poivrade and Jerusalem artichokes in separate pots of boiling salted water for 8-10 minutes or until tender, then drain. Blanch the snow peas in boiling water for 2 minutes. Drain and refresh under cold water, then drain again. 3. For the dressing, blanch the orange zest in boiling water for 1 minutes, then refresh under cold water and drain well. Whisk together all the dressing ingredients, adding seasoning to taste. 4. Place the artichokes in a bowl, pour over the dressing, then add the snow peas. Serve at room temperature.
