" From the Hearth " Soup

Amount Measure Ingredient -- Preparation Method

1 large onion -- chopped

8 cups vegetarian broth

4 to 5 cups vegetables (carrots, cabbage, and celery

are good choices) -- chopped, sliced, or shredded

1/2 to 1 cup cooked soybeans

or

1/3 cup soy grits

1 cup canned tomatoes

or

2 cups fresh tomatoes

2 cups juice from canned tomatoes

or

1/2 6 oz can tomato paste mixed with 1 cup water

1/2 cup brown rice -- uncooked

1/3 cup bulgur wheat -- uncooked

2 tablespoons soy sauce

1/4 teaspoon dried basil

1/4 teaspoon dried oregano

1/4 teaspoon dried tarragon

1/4 teaspoon savory

1/4 teaspoon thyme

1/4 teaspoon rosemary

1/4 teaspoon marjoram

1/4 teaspoon sage

pepper to taste

pinch cayenne

 

In a large pot, steam-fry the onion until soft. Add remainder of ingredients

and bring to a boil, then reduce the heat, cover, and simmer, one to two hours.

If you wish, frozen corn, frozen peas, and fresh, chopped parsley can be added

toward the end of cooking time.
