Sesame Tomato Sauce

Recipe By : The High Road to Health by Wagner and Spade, page 162

Serving Size : 1 Preparation Time :0:00

Categories : Sauces And Marinades Vegetables

Amount Measure Ingredient -- Preparation Method

-------- ------------ --------------------------------

1 teaspoon cold-pressed olive oil

1 medium onion -- finely chopped

2 cloves garlic -- chopped

28 ounces canned tomatoes -- chopped

1/2 teaspoon toasted sesame oil

3 tablespoons soy sauce

3 tablespoons barley malt syrup

1 teaspoon dried basil

1 dash ginger

Makes 4 cups

This sauce is a pleasant alternative to traditional spaghetti sauces. It

has a light and interesting taste.

1. Heat the olive oil in a large skillet. Add the onion and garlic and

cook, covered, over medium heat until the onion is limp and translucent,

about 10 minutes. If the onion starts to brown, reduce the heat.

2. Add all the other ingredients and cook, covered, for 30

minutes. Remove the cover and cook for 10 minutes more to boil away excess

liquid. The sauce will be chunky. If you prefer a smooth sauce, purée in

a blender or pass through a strainer.
