Dissolve the arrowroot in one tablespoon of the soy milk and add to the agar mixture, whisking briskly. Boil and cook for 2 minutes more, stirring constantly. Pour the soy milk into a blender and blend while adding the agar mixture. If you are using all of the oil substitute to be used immediately as a salad dressing, add all the other dressing ingredients, blend until smooth, and chill for 45 minutes. If making it to have on hand, store in a closed container in the refrigerator without adding the other dressing ingredients, and use it in place of oil in salad dressings.
