Teriyaki Tofu

Amount Measure Ingredient -- Preparation Method

1 pound Chinese tofu -- firm

1/4 cup Braggs Aminos

(Soy sauce may be used for a

slightly different taste.)

2 tablespoons nutritional yeast

2 teaspoons garlic powder

2 teaspoons onion powder

8 bamboo skewers

1/4 cup teriyaki sauce

2 tablespoons cold-pressed olive oil

 

Serves four

 

In taste and texture, this dish is reminiscent of chicken.

 

1. Preheat the oven to 350F. Cut the tofu into strips about 1/4 inch

thick and 3/4 inch wide. Press the slices gently in a clean kitchen towel

to expel excess water. Arrange on a lightly oiled baking dish so that the

pieces do not touch.

 

2. Brush liberally with Braggs Aminos. Sprinkle liberally with

nutritional yeast, garlic powder, and onion powder.

 

3. Bake for 40 minutes but do not allow it to scorch. Let cool for 5 minutes.

 

4. Thread lengthwise onto the bamboo skewers. Return to the baking

dish. Brush with teriyaki sauce and a little olive oil. Heat under the

broiler for 5 minutes. Do not allow to burn.

 

5. Serve on a bed of brown rice as a main dish, or with Chinese mustard as

an hors d'oeuvre.
