Guest guest Posted April 2, 2001 Report Share Posted April 2, 2001 * Exported from MasterCook * Tofu " Bacon " Recipe By :The (Almost) No Fat Cookbook - Bryanna Clark Grogan Serving Size : 0 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/2 cup soy sauce (low-salt if available) 1 tablespoon nutritional yeast flakes 1 tablespoon maple syrup 1/2 tablespoon liquid smoke flavoring 1/2 pound reduced-fat, extra-firm regular tofu Mix everything except the tofu in a shallow container. With a cheese slicer, shave the tofu into very thin slices. Marinate the tofu in the soy sauce mixture for 1 day or more. To cook, heat a lightly oiled, heavy skillet or nonstick griddle over medium high heat. When the pan is hot, " fry " the tofu slices until they are golden-brown and almost crispy on both sides, scraping underneath the slices as you turn them with a sturdy spatula. Turn several timed during cooking, and cool in the pan (it crisps up as it cools). This makes excellent " BLT " sandwiches and can be sliced or diced and added to other dishes for a bacon flavor. Description: " It's hard to make a crispy product without frying it in oil, but this comes close. If you want it crunchier, you can dry it in an electric home food dehydrater.
