Guest guest Posted April 1, 2001 Report Share Posted April 1, 2001 * Exported from MasterCook * Tempeh Marinade Recipe By : The High Road to Health by Wagner and Spade, page 143 Serving Size : 1 Preparation Time :0:00 Categories : Sauces And Marinades Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 teaspoon cold-pressed olive oil 1 small onion -- finely chopped 3 garlic cloves -- finely chopped 6 mushrooms -- one week old thinly sliced OR 3 dried shiitake mushrooms -- broken stems included and soaked for 30 minutes in 1/4 cup water 3/4 cup water 1/4 cup apple juice 1 teaspoon oregano 1/4 teaspoon basil 1/4 teaspoon tarragon 1 tablespoon vinegar 1/2 cup red wine 1/3 cup natural soy sauce 1 dash nutmeg 1/8 teaspoon pepper 1/2 teaspoon salt Makes enough to marinate 1 lb. of tempeh or tofu. Heat the oil in a saucepan. Add the onion and cook until golden. Add the garlic and cook for 1 minute more. Add all the other ingredients and simmer, covered, for 30 minutes. Include the soaking water if shiitake mushrooms are used.
