Drain the tofu and cut into 1/4 inch-thick to 1/3 inch thick slices. Place the slices side by side on a clean, absorbent kitchen towel. Cover with another towel. Place a large book on top and allow the tofu to drain for 30 minutes. 2. Place the tofu slices and marinade in a sealed container and marinate for two to four days, unless the recipe you are using states otherwise. Make sure that all the slices are covered by the marinade by turning the container over every day. 3.
