Most tempeh is made from soy beans only, but tempeh made from a mixture of beans and grains is also available and often has a milder flavor. 1. Cut the tempeh in half width-wise. With a sharp knife cut each slice into two thinner slices so that they are the same length and width and half the thickness. 2. Place the tempeh slices in a sealed container with the marinade for two to four days, unless the recipe you are using states otherwise. Make sure that all the slices are covered by the marinade by turning the container over every day. 3. Remove the tempeh from the marinade, drain, and proceed according to the recipe. - - - - - - - - - - - - - - - - - -
