Guest guest Posted March 31, 2001 Report Share Posted March 31, 2001 * Exported from MasterCook * Orange Juice Tzimmes Recipe By : Serving Size : 0 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 8 carrots -- sliced 1 cup prunes 2 cup orange juice or enough to cover the carrots and prunes 1/3 cup white sugar 4 tablespoon butter -- margarine, oil or ghee rind of one lemon 1/2 teaspoon grated ginger root 1. Place carrot and prunes in a pot. Cover the vegetables with orange juice. Bring the mixture to a boil, let boil 10 minutes. 2. Stir in sugar and butter or margarine. Simmer gently for 1 hour or until the liquid is almost absorbed. sprinkle with lemon rind and ginger and let simmer another 5 minutes.
