Jambalaya

1 1/2 tablespoons butter

3 cups chopped onions

2 red or green bell peppers -- seeded & chopped

2 cups finely chopped scallions

2 cloves garlic -- minced

1 cup chopped parsley

1 tablespoon chopped fresh oregano or 1 tsp. dried

1 teaspoon fresh thyme leaves or 1 tsp. dried

3 bay leaves

2 pinches cayenne

1 1/4 cups uncooked white rice

4 plum tomatoes -- chopped fine

1 tablespoon tomato paste

3 3/4 cups water

1/3 cup dried lentils

1 teaspoon salt -- or more to taste

2 ears corn -- each cut into 4 pieces

20 olives -- preferably imported, pitted

fresh ground black pepper to taste

 

In a heavy-bottomed stockpot, melt the butter over medium heat. Add the onions,

bell peppers, and scallions. Saute for 10 minutes, stirring often.

 

Add the garlic, parsley, oregano, thyme, bay leaves, and cayenne. Saute,

stirring often, for 2 minutes. Add the rice and mix well. Add the tomatoes,

tomato paste, water, lentils, and salt. Turn the heat to high and bring the

stew to a boil. Stir until the tomato paste is fully incorporated, then cover

the pot and reduce the heat to low. Simmer the stew for 25 minutes.

 

Add the corn pieces and the olives and cook the stew for about 5 minutes more,

until the lentils and rice are tender. Season with black pepper and, if you

like, more salt. Serve the stew right away.
