Long-Cooked Eggs

Recipe By : Vegetarian Celebrations, by Nava Atlas, page 62

Serving Size : 1 Preparation Time :0:00

Categories : Holidays Side Dishes

Amount Measure Ingredient -- Preparation Method

1 egg per guest

(Huevos Haminados)

Commonly served at many Sephardic holiday meals, these are particularly

typical at Sephardic Seders. The eggs are cooked or baked for many hours,

turning the white a pale brown and giving the entire egg a rather creamy

texture.

Place as many eggs as needed in a single layer in a large pot and cover

with at least 3 times their volume in water. Bring to a boil, then cover

and simmer at the lowest possible heat for 8 hours. Or, you may place the

pot in a 200 degree oven overnight. Cool, then peel and arrange on a

platter to serve.
