Double Chocolate Chip Muffins

2 ounces coconut milk

1 1/4 cups boiling water

2 cups self-rising flour

1 tablespoon baking powder

pinch salt

1/4 cup unsweetened cocoa powder (generous)

1/4 cup light brown sugar

1/4 cup sunflower oil

6 ounces vegan dark chocolate

 

Preheat the oven to 350F. Combine the boiling water and the coconut milk in a

bowl. Stir until dissolved, then set aside until cool. Break up the chocolate

into chunks.

 

Sift together the flour and baking powder, and add the salt and cocoa powder.

Stir in the sugar.

 

Make a well in the center and pour in the coconut milk and oil. Mix well. Stir

in the chocolate.

 

Spoon the mixture into eight paper muffin cups set in a muffin pan and bake for

15 minutes. Transfer the muffins to a wire rack to cool.
