Guest guest Posted March 30, 2001 Report Share Posted March 30, 2001 * Exported from MasterCook * Banana and Cardamom Bread Recipe By :The Vegan Cookbook - Nicola Graimes Serving Size : 0 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2/3 cup warm water 1 teaspoon active dry yeast pinch sugar 10 cardamom pods 3 1/2 cups unbleached all-purpose flour 1 teaspoon salt 2 tablespoons malt extract 2 ripe bananas -- mashed 1 teaspoon sesame seeds Put the water in a small bowl. Sprinkle the yeast on top, add the sugar and mix well. Let stand for 10 minutes. Split the cardamom pods. Remove the seeds and chop them finely. Sift the flour and salt into a mixing bowl and make a well in the center. Add the yeast mixture with the malt extract, chopped cardamom seeds, and bananas. Gradually incorporate the flour and mix to form a soft dough, adding a little extra water if necessary. Turn the doough onto a lightly floured surface and knead for 5 minutes, until smooth and elastic. Return to the clean bowl, cover with a damp dishh towel and let rise for 2 hours, until the dough has doubled in size. Preheat the oven to 425F. Grease a baking sheet. Turn the dough onto a lightly floured surface, knead briefly, then shape into a braiid. Place the braid on a plastic sheet and cover loosely with a plastic bag, ballooning it to trap the air. Let sit until well risen. Brush the braid lightly with water and sprinkle with sesame seeds. Bake for 10 minutes, then lower the oven temperature to 400F. Cook for 15 more minutes or until the loaf sounds hollow when tapped underneath. Cool on a wire rack.
