Mushroom Pilaf

Amount Measure Ingredient -- Preparation Method

3 tablespoons vegetable oil

2 shallots -- finely chopped

1 garlic clove -- crushed

3 green cardamom pods

2 1/4 cups button mushrooms -- sliced

generous 1 cup basmati rice -- soaked

1 teaspoon grated fresh ginger root

1 good pinch garam masala

2 cups scant - water

1 tablespoon chopped cilantro

salt

 

Heat the oil in a flameproof casserole and fry the shallots, garlic, and

cardamom pods oover medium heat for 3 - 4 minutes, until the shallots have

softened and are beginning to brown.

 

Add the mushrooms and fry for 2 - 3 more minutes. Add the rice, ginger, and

garam masala. Stir-fry over low heat for 2 minutes, then stir in the water and

salt. Bring to a boil, cover and simmer for 10 minutes.

 

Remove the casserole from heat. Let stand, covered, for 5 minutes. Add the

chopped cilantro and fork it through the rice. Spoon into a serving bowl and

serve immediately.
