Guest guest Posted March 30, 2001 Report Share Posted March 30, 2001 * Exported from MasterCook * Sautéed Carrots With Almonds Recipe By : Vegetarian Celebrations, by Nava Atlas, page 66 Serving Size : 8 Preparation Time :0:00 Categories : Holidays Side Dishes Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 tablespoons reduced-fat margarine 1/4 cup apple juice -- or more as needed 2 pounds carrots -- thinly sliced 1 tablespoon lemon juice 2 tablespoons minced chives -- up to 3 1/4 cup sliced almonds 1 dash salt 8 to 10 servings Heat the margarine and apple juice in a large skillet. Add the carrots and sauté over moderate heat, stirring frequently, until crisp-tender and beginning to turn golden, about 10 to 15 minutes. If the skillet begins to turn dry, sprinkle in additional apple juice while sautéing. Continue to sauté, stirring, until the carrots are just tender. Stir in the remaining ingredients, then transfer to a serving container.
