Guest guest Posted March 30, 2001 Report Share Posted March 30, 2001 * Exported from MasterCook * Carrot-Apple Pudding Recipe By : Vegetarian Celebrations, by Nava Atlas, page 60 Serving Size : 6 Preparation Time :0:00 Categories : Desserts Side Dishes Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 5 large carrots -- grated 2 medium apples -- peeled cored and grated 1/3 cup raisins 3 egg whites -- lightly beaten 2 tablespoons canola oil 1/4 cup sweet Passover wine 1/4 cup packed brown sugar 1 teaspoon cinnamon 1/4 teaspoon ground allspice 1/4 teaspoon nutmeg 1/4 teaspoon ginger 6 to 8 servings Preheat the oven to 325 degrees. Combine all the ingredients in a mixing bowl. Pour into an oiled 9-by 5-by 3-inch loaf pan. Cover and bake for 45 minutes. Uncover and bake another 40 to 45 minutes, or until the top is nicely browned and crusty. Let cool. Slice and serve warm or at room temperature.
