Glazed Sweet Potatoes with Ginger and Allspice

2 pounds sweet potatoes

2 tablespoons vegan margarine

3 tablespoons olive oil

2 garlic cloves -- crushed

2 pieces crystallized ginger -- roughly chopped

2 teaspoons ground allspice

1 tablespoon syrup from crystallized ginger jar

2 teaspoons chopped fresh thyme

plus

extra sprigs to garnish

salt

cayenne pepper

 

Peel the sweet potatoes and cut into 1/2-inch cubes. Melt the margarine with

the oil in a frying pan. Add the sweet potato cubes and fry for 10 minutes,

until just soft.

 

Stir in the garlic, ginger, and allspice. Cook, stirring, for 5 more minutes.

Stir in the ginger syrup, salt, a generous pinch of cayenne, and thhe fresh

thyme. Stir for 1 - 2 more minutes, then serve sprinkled with thyme sprigs.
