It is purported to aid digestion, and it needs only to be diluted with water to make a tasty soup. This version is a bit more complex, but still takes only about 15 minutes to prepare. 1. Slightly crush the garlic cloves with a whack of a cleaver or chef's knife. Heat the water with the crushed garlic and the sliced ginger. Bring the water to a boil, turn down the heat, and simmer for 10 minutes. Remove the ginger and garlic from the water. 2. Add the miso, and stir until it breaks down. Add the tofu cubes, scallions, and carrots, and simmer for another 2 minutes.
