Citrus Fruit and Grain Salad

Amount Measure Ingredient -- Preparation Method

4 cups cooked grain (such as brown rice -- wild rice, bulgur,

quinoa, or barley, or a combination)

2 navel oranges -- peeled and chopped

1/2 cup minced fresh parsley

1/3 cup raisins

1/4 cup extra-virgin olive oil

3 tablespoons fresh lemon juice

1 tablespoon wine vinegar

2 teaspoons dijon mustard

salt and pepper

 

Combine the grain, oranges, parsley, and raisins in a large bowl.

 

In a small bowl, whisk together the oil, lemon juice, vinegar, and mustard. Pour

over the rice and fruit, and toss well. Season with salt and pepper, and toss

again. Serve chilled.
