Kasha Varnishkes (buckwheat Groats and Pasta)

2 tablespoons canola or olive oil

1 medium onion -- julienned

6 ounces bow-tie noodles

2 cups lightly salted water

1 cup roasted buckwheat groats

salt and pepper

 

Heat the oil in a large skillet. Add the onion and sauté over low heat until

very tender and browned, about 30 to 60 minutes.

 

Cook the pasta until tender. Drain and set aside.

 

Bring the water to a boil in a medium saucepan. Add the buckwheat and stir.

Reduce the heat to low, cover, and simmer until the grain is tender and the

water is absorbed, about 15 minutes.

 

Combine the browned onions with the pasta and cooked buckwheat. Season with salt

and pepper. Serve hot.
