Bok Choy and Mushroom Stir-Fry

4 dried black Chinese mushrooms

1 pound bok choy

2 ounces oyster mushrooms

2 ounces shiitake mushrooms

1 tablespoon vegetable oil

1 clove garlic -- crushed

2 tablespoons oyster sauce

 

Soak the black Chinese mushrooms in 2/3 cup boiling water for 15 minutes to

soften.

 

Tear the bok choy into bite-size pieces with your fingers.

 

Halve any large oyster or shiitake mushrooms, using a sharp knife.

 

Strain the Chinese mushrooms. Heat the wok, then add the oil. When the oil is

hot, stir-fry the garlic until softened but not colored.

 

Add the bok choy and stir-fry for 1 minute. Mix in all the mushrooms and

stir-fry for 1 minute.

 

Add the oyster sauce, toss well to coat the bok choy and mushrooms, and serve

immediately.
