Guest guest Posted March 27, 2001 Report Share Posted March 27, 2001 * Exported from MasterCook * Rockin' Guacamole Recipe By :Didi Emmons Serving Size : 0 Preparation Time :0:00 Categories : Small Bites Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 1-pound eggplant 1 ripe Haas avocado (the dark, bumpy kind) -- peeled and pitted 1 red bell pepper -- minced 2 mildly hot peppers (such as Italian or Anaheim) -- minced OR 1 green bell pepper -- chopped, and a pinch of cayenne 1 garlic clove -- minced 1/2 cup minced red onion 1/4 cup minced cilantro 1 tablespoon extra-virgin olive oil 1/4 cup lime juice -- (from about 2 limes) 1/2 teaspoon salt -- or more, to taste Fresh ground black pepper -- to taste Preheat the oven to 425º. Cut the eggplant in half and lay the two halves on a baking sheet, cut side up. Bake the eggplant for 30 minutes. Remove it from the oven, and let it cool. In a bowl, combine the avocado, red bell pepper, hot peppers, garlic, red onion, cilantro, olive oil, and lime juice. Spoon the eggplant from its skin, and add it to the bowl. With a potato masher or a fork, mash the mixture coarsely. Add the salt and pepper. Chill the dip for at least 30 minutes, then serve it with tortilla or pita chips. NOTES : This is a chunky. low-fat guacamole that I invented when I had to bring an hors d'oeuvre to a party, but had only a small amount of edible food in my refrigerator. (This is, I think, How many recipes are born.) On this particular day I had a ripe avocado, an eggplant, a red and a green pepper, some cilantro, and not much else. After roasting the eggplant, I mashed its flesh with the avocado, chopped peppers, chopped cilantro, lime juice, garlic, and red onion. One of my friends said that it tasted better than traditional guacamole, but I'll just say it's really good. Nutr.
