Kathleen * Exported from MasterCook * Millet Loaf Recipe By : Jude's version of Ron Pickarski's " Friendly Foods " Serving Size : 1 Preparation Time :0:00 Categories : Grains And Cereals Main Dishes, Vegetarian Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 1/2 cups uncooked millet 3 3/4 cups water 2 teaspoons salt -- (I omit) 1 1/2 cups carrot -- finely diced 1 cup celery -- finely diced (I sub mashed precooked pinto beans) 1 cup onion -- finely diced 1 clove garlic -- minced 2 tablespoons sesame oil -- (I omit) 1 1/2 teaspoons dill weed -- (fresh) 1 tablespoon thyme -- (fresh) 1 cup roasted sunflower seeds (I sub toasted walnuts-finely chopped) 3 tablespoons unbleached flour 3 tablespoons gluten flour [i sub 6 TBS ww pastry flour TOTAL] Bring water and 1/2 tsp salt to boil, add rinsed millet, cover, simmer 15 minutes. Turn off heat, and let stand, covered about 15 minutes. The directions say to saute the vegetables in the oil until onions are translucent, then add the seasonings. I put the vegetables in a bowl without oil, and pre-cook them in the MW until they are about the same level of " doneness " (about six minutes for me). Then I add the seasonings to the veggies and let stand a minute or two. This is the point in the recipe where you can get the kids involved (if you have any). Mine come and mix everything together (millet, vegetables, nuts) with clean hands, and have a ball! When everything is mixed, we add the flour(s), and mix again. Press the mixture into sprayed, floured pans. This makes two small, or one big loaf. Bake the small size for 45 minutes @ 350, or the large for 1 hour @ 400. I usually bake one small for dinner (two adults, two children - 10 and 7), and pop the other in the freezer for baking later. This loaf can be made with any leftover grain, or a mixture. We eat it here with ketchup (ds), Hain gravy (dd and me), or chipotle sauce (dh). Mashed potatoes (or roots), and a fruit salad go well with this.
