Guest guest Posted March 26, 2001 Report Share Posted March 26, 2001 * Exported from MasterCook * Vegetarian Mexican Rice Recipe By : Serving Size : 0 Preparation Time :0:00 Categories : Side Dish/Rice Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 tablespoon vegetable oil 4 cloves garlic -- finely chopped 5 round sliced scallions 2 diced celery stalks 1 seeded and chopped red bell pepper 1 1/4 cups uncooked rice 2 cups vegetable stock 2 cups chopped tomatoes 1 tablespoon chili powder 1 teaspoon basil 1 teaspoon oregano 1 teaspoon cayenne pepper 1/2 teaspoon cumin 2/3 cup peas salt and pepper to taste Saute garlic and scallions in oil. When garlic becomes translucent, add remaining ingredients. Bring mixture to a boil, stirring constantly. Cover and reduce heat to low. Simmer until rice is cooked through.
