Refried Beans

Amount Measure Ingredient -- Preparation Method

2 tablespoons vegetable oil

3 tablespoons minced onion

1 clove garlic -- minced

1/4 teaspoon ground Cumin

1 1/2 cups Frijoles

(see separate recipe)

OR Mexican beans

 

Vegan

 

Makes: 1 1/3 cups; serves: 2 to 4

 

You can use frijoles left over from a previous meal, or buy Mexican beans

(elRio makes some), which are pinto beans with chili sauce.

 

1. In a medium skillet, heat the oil over medium-high heat. Add the onion

and garlic; cook, stirring, until onion is tender, about 2 minutes. Stir

in the cumin until absorbed.

 

2. Add the beans and mash with a fork. Cook until dry

 

Variation: For a spicier version, add 1/4 teaspoon ground red pepper when

you add the cumin.
