Pico De Gallo

Amount Measure Ingredient -- Preparation Method

1 1/2 cups finely chopped fresh tomatoes

1/2 cup finely chopped onions

1/3 cup finely chopped green peppers

1/4 cup finely chopped red peppers

1/4 cup chopped fresh cilantro or parsley

1 teaspoon finely chopped fresh jalapeño peppers -- or to taste

1/2 teaspoon salt -- or to taste

 

Vegan. Low fat

 

Makes 2 1/3 cups

 

This simple raw relish is great to sprinkle on top of anything that can use

a little perking up. Make this relish as spicy as you like (as written,

it's fairly mild) by playing around with the amount of jalapeño pepper

 

1. In a medium bowl, stir together all the ingredients.
