Jalapeño Carrots

Amount Measure Ingredient -- Preparation Method

1 1/2 tablespoons butter or margarine

3 cups julienned carrots

3 tablespoons slivered seeded jalapeno peppers

1 1/2 tablespoons sugar

1 tablespoon water

1 teaspoon fresh lime juice

1/8 teaspoon salt -- or to taste

 

Vegan.

 

Makes: 2 1/4 cups; serves: 3 to 4

 

These are really not as spicy as you would imagine.

 

1. In a large skillet, melt the butter or margarine over medium-high

heat. Add the carrots and peppers; cook, stirring, until tender-crisp,

about 3 minutes.

 

2. Add the sugar, water, lime juice, and salt. Cook, stirring, until

carrots are glazed and liquid has evaporated, about 5 minutes.

 

Variation: Jalapeño Jicama: Substitute jicama for the carrots.
