Makes: 2 1/4 cups; serves: 3 to 4 These are really not as spicy as you would imagine. 1. In a large skillet, melt the butter or margarine over medium-high heat. Add the carrots and peppers; cook, stirring, until tender-crisp, about 3 minutes. 2. Add the sugar, water, lime juice, and salt. Cook, stirring, until carrots are glazed and liquid has evaporated, about 5 minutes.
